We could eat Chicken Chow Mein weekly. We adore these tender noodles tossed with golden fried chicken or shrimp. We usually eat it with chicken, so we’re sharing our go-to Chicken Chow Mein recipe today. To make it at home, we will need essential ingredients such as soy sauce and oyster sauce, which are widely available, so this shouldn’t be a problem. We always order Chicken Chow Mein when traveling to big cities. This delicious dish is always fresh, well-balanced, and full for hours. This is why we believe you're going to adore it:

Essential ingredients 

The essential ingredients are divided into two parts. We need most of the ingredients for our Chicken Chow Mein and the rest for the sauce that goes into Chow Mein while cooking. Below, you can read more about the ingredients.

Protein - we love adding chicken to our homemade (better than takeout) chow mein. We used boneless and skinless chicken breast. However, this recipe works amazingly with shrimp, beef, pork, or tofu.

Soy sauce - Use light soy sauce or low-sodium soy sauce. If you have dark soy sauce at home, reduce it with water to get the same amount as needed in the recipe.

Vegetables - This recipe used cabbage, carrots, garlic, and spring onion (scallion). Optionally, feel free to add some celery too.

Noddles - use your favorite Asian rice noodles.

Oyster sauce - For an extra umami flavor, add oyster sauce. It brings so much richness to the dish.

Chinese cooking wine - Chinese rice cooking wine, or Shaoxing wine, is very aromatic and delicious. If you can't get it in your country, leave it out.

Cornstarch - thickens the sauce.

Sugar - Adding sugar doesn't mean that the dish is sweet. It's not. However, sugar balances other flavors and makes it well-balanced.

Sprouts - use fresh or jarred sprouts. Optionally add bamboo shoots.

Storing

Keep the cooked  Chicken Chow Mein in an airtight container in the fridge for up to 3 days. Before serving, reheat well in a pan on the stove or in a microwave.

METHOD

  • meat preparation

    Cut the chicken breast into stripes or cubes. Add to a bowl and season with soy sauce and pepper. Set aside to marinate and prepare the vegetables.

    Cut the cabbage into thin stripes. Peel the carrots and cut into thin slices (julienne). Dice the garlic and cut the spring onion into pieces of 5 cm (2 inches).

    In a bowl, stir together soy sauce, oyster sauce, Chinese cooking wine, cornstarch, stock or water, sugar, and a pinch of pepper.

    Rezance skuhamo po navodilih iz embalaže.

    Vok damo na močan ogenj. Dodamo sezamovo olje in piščanca. Pražimo 2 minuti, nato dodamo česen in pražimo 30 sekund. Sledi zelje in korenje in pražimo 1 - 2 minuti. Dodamo odcejene riževe rezance in mlado čebulo. Pražimo minuto. Dodamo pripravljeno omako, dobro premešamo in kuhamo minuto. Tik preden postrežemo vmešamo v jed še sveže (ali vložene) kalčke.

    Chow Mein s piščancem razdelimo med štiri krožnike. Posujemo s sezamom in postrežemo.
